Aeron boasts an extensive and highly-awarded culinary career. After gaining valuable experience at the renowned Fusion Resort and Radisson Blu in Phu Quoc, he returned to Saigon with a focus on Mediterranean flavours to further advance his career.
Aeron now serves as the Group Executive Chef for elWilly, overseeing acclaimed establishments such as Tomatito, which won Best Restaurant 2018, as well as Bandido Saigon and Lupin. Since 2020, he has also been President of The Western Cuisine Club from the Vietnam Chefs Association, where he works to foster a supportive kitchen community and inspire a new generation of culinary professionals.
Some of Aeron’s notable achievements include a gold medal at the VEDAN cooking challenge (2013), a silver medal at the Food and Hotel Asia (2022), and serving as Coach of the Vietnam Culinary Team - Battle Of The Chef (2024) held in Malaysia.
The Lambassador Program
A delegation of 15 renowned chefs from 12 countries, including Vietnam, Japan, the United States, and Saudi Arabia, recently visited Australia for a week-long immersion into the country’s premium lamb industry.
The global culinary experience, co-hosted by Meat & Livestock Australia (MLA) and the Victorian Government, showcased the finest Australian lamb, reinforcing its international reputation for quality and sustainability.
The Program Journey
As part of the Lambassador Program, these top chefs embarked on a journey across Victoria, delving into the intricacies of lamb production and the country’s rich culinary culture. Their itinerary included visits to lamb farms, processing facilities, and iconic culinary destinations, offering them a first-hand look at the expertise, sustainability, and innovation driving the Australian lamb industry.
Building Global Connections
Josh Anderson, MLA’s Group Manager of International Markets, emphasized the program’s significance:
“We are proud to work together to create such an impactful experience for these international chefs, ensuring that Australian lamb continues to inspire global menus.”
Workshops, butchery demonstrations, and meetings with Yarra Valley producers deepened the chefs’ understanding of Australia’s world-class supply chain. The chefs also engaged with local industry leaders, gaining insights into the practices and people behind one of the world’s most celebrated lamb industries.
A Highlight: The Lambassador Gala Event
The week concluded with the Lambassador Gala Event at Melbourne Cricket Ground (MCG), a celebration bringing together Victorian Government representatives, lamb producers, exporters, and food service professionals. The event marked the culmination of the chefs' Australian journey, highlighting the program’s focus on fostering international collaboration and culinary creativity.
