  • Soy sauce: 5g
  • Dark soy sauce: 5g
  • Oyster sauce: 10g
  • Sugar: 5g
  • Monosodium glutamate: 1g
  • Seasoning powder: 3g
  • Chilli powder: 1g
  • Water: 25g
  • Cooking oil: 15g
  • Shallots: 10g
  • Garlic: 10g

Method

  1. Cut 300g of Australian beef (any cut) into 0.2-0.5cm thick slices and store in the refrigerator before cooking.

  2. Wash, peel, and cut in half 500g of Asparagus. Blanch asparagus in boiling water for 1.5 minutes. Immediately soak in iced water to make the asparagus crispier.

  3. Make the sauce:

    • Sauteed minced shallots and garlic in cooking oil.

    • Add soy sauce, dark soy sauce, oyster sauce, sugar, monosodium glutamate, seasoning powder, chili powder, water into pan and stir well. When the sauce boils, lower the heat and simmer for another 2 minutes.

  4. Stir fry asparagus and beef for 2 minutes or until beef is cooked. Add the sauce mixture and stir-fry together, continuing to stir over high heat until the sauce evenly coats the beef and asparagus.

  5. Arrange the beef and asparagus on a plate, pour the sauce in the pan evenly on the surface, and decorate with a few slices of red chili or sliced yellow-red bell pepper and coriander.
